
Aubergines in rich tomato sauce and fresh rocket with white basmati rice.
Was good but can be improved
Aubergines in rich tomato sauce
Ingredients
2 big aubergine -chopped, salted and washed-
3 spoons of tomato pure
5 fresh chopped tomato or a can can do it
1 dry chili
2 bay leaves
2 cups of water
olive oil
salt
Fry the bay leave with the olive oil for 30 second and add the pure, mix well a leave cook for 1 minute then add the tomatoes, salt and one cup of water and cook for 5 minutes. Then add the aubergine; the rest of water and the chili. Cook for another 12 minutes and done.
Basmati rice
1 cup of rice
2 1/2 cups of water
Just boiled the rice in low heat until's dries
Rocket
Wash and chop it
